Microwave Chocolate Cake
serves 9 Prep time:10 Min Cook time

INGREDIENTS
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 3 tablespoons baking cocoa
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup cold water
- 1/3 cup vegetable oil
- 1 tablespoon vinegar
- 1 teaspoon vanilla extract
- CHOCOLATE SAUCE:
- 1 cup sugar
- 3 tablespoons cornstarch
- 2 tablespoons baking cocoa
- 1 cup boiling water
- Dash salt
- 1 tablespoon vegan butter
- 1 teaspoon vanilla extract
DIRECTIONS In a bowl, combine the first five ingredients. Stir in water, oil, vinegar and vanilla until well blended. Pour into an ungreased 8-in. square microwave-safe dish. Microwave on high for 6-8 minutes, turning the dish every 2 minutes, or until a toothpick inserted near the center comes out clean. In a 1-qt microwave safe bowl, combine sugar, cornstarch and cocoa. Stir in water and salt. Microwave 1 minute more. Stir in butter and vanilla. Spoon over pieces of warm cake.

This looks yummy, i can’t wait to try! I have no corn starch though, so i have to. Boo.
In response to Embyr (and i get that was 4 years ago, but people can be so hard on each other), i just always assume that if i’m at a vegan site or blog, they mean use Vegan Butter. Milk, they mean nutmilk, hemp or soy. I’m sad that the only response to your – Soychick’s – generously sharing your recipe was someone trying to be a smarmy pants.
I’ll post after i hit the grocery & try your cake, soychick!
