Hawaiian Haupia (Pineapple Haupia option)

Hawaiian Haupia (Pineapple Haupia option)

Ingredients:

1/3 cup cornstarch
1/2 cup sugar
1/8 teaspoon salt
24 ounces frozen coconut milk

**small can of pineapple chunks (optional)

Combine cornstarch, sugar and salt. Add 1/2 cup coconut milk and blend into a smooth paste. Heat remaining milk and add cornstarch mixture. Cook for 20 minutes, stirring frequently until thickened. Pour into 8″ square baking pan. Cool and refrigerate. Cut into squares.

**To make pineapple haupia, remove fruit from can and drain. Break fruit into bits with fork and mix into mixture once the coconut starts to thicken.

An elegant vegan restaurant that will impress anyone vegan or not. The service is excellent, the food is even better and its perfect for special occasions or anytime when you feel like treating yourself to great food. Highly recommended!

They also have special menus that let you try out several dishes which I will definitely try next time.

The menus seem to change according to availability and season, I can’t wait to go again to try something new.

Vegan Sugar Cookies

Vegan Sugar Cookies – makes 12 “danish tin” sized cookies

Ingredients
1 3/4 Tbsp extra-firm silken tofu (mashed or pureed in blender)
1/3 cup vegan margarine
5/8 tsp vanilla
1/3 cup sugar
3/4 cup flour
5/8 tsp baking powder
1/4 tsp salt

2 Tbsp sugar to sprinkle on top when cooked

1. Cream margarine and sugar until fluffy.
2. Add mashed tofu and vanilla. Mix well.
3. Sift the flour, baking powder and salt into the mixture.
4. Roll out the dough and use cookie cutters. (Make any shape you’d like, the dough will not rise much so cut as thick as desired.)
5. Bake for around 10-12 mins in 350 degree oven.
6. Note: You might need to adjust the flour a bit if the dough feels too wet.
7. Add 2 more tablespoons sugar over all cookies. Add more sugar if desired.

Vegan Peppermint Bark

Vegan Peppermint Bark

Ingredients:
7 oz. vegan semi-sweet chocolate, chopped
17 oz. vegan white chocolate
30 peppermint candies, crushed (about 6 oz.)
3/4 tsp peppermint extract

Instructions:
Turn a large baking sheet upside down, and cover it in foil or wax.

Heat the white chocolate chips in a double boiler(by placing them in a bowl over simmering water) until smooth. Spread them with a spatula in the rectangle, and sprinkle about half of the peppermint candy. Refrigerate for 15 minutes. Heat the dark chocolate in a saucepan with the peppermint extract. Spread over the white chocolate in the rectangle and refrigerate for about 25 minutes. Reheat the white chocolate chips, and spread them as the final layer, adding the remaining peppermint on top.

Chill for an additional 20 minutes or longer, then break the bark into pieces and serve.

Vegan Rice Crispy Treats

INGREDIENTS

o 3/4 cup peanut butter
o 3/4 cup brown rice syrup
o 1/2 t vanilla
o 1/2 t cinnamon
o 1/4 cup chopped peanuts
o 1/2 cup carob or semi-sweet chocolate chips
o 2 cups crispy rice cereal
o Some shredded coconut

METHOD
Mix the peanut butter, rice syrup, vanilla, cinnamon, 1/4 cup chopped peanuts and carob chips together in a large bowl. Add the cereal, stirring gently until it is well coated. Place a small bowl of water near your work surface. Using wet hands, form the cereal mixture into walnut sized balls and roll the balls in the shredded coconut. Place the balls in a container lined with waxed paper. Store at room temperature or in the freezer.

Since there is no single vegetarian eating pattern, our company dietitian has compiled the list below of suggested menu options for the various types of vegetarian diets. We hope that you will find this list helpful during your next visit to our restaurant.

If an item you desire does not appear on the list below, our chefs will gladly try to accommodate your special dietary needs by custom-preparing a meal using any ingredients that we have available in our kitchen. However, please be aware that none of our food items are certified vegetarian. Additionally, many of our recipes contain meat, fish, egg and dairy products and normal kitchen operations involve the sharing of cooking and preparation areas, including common fryer oil. I highly recommend the Joey Z’s Angel Hair, the portions are huge! Although not listed in the website menu, the Las Vegas Maggiano’s has 2 side dishes that are vegan too – the sauteed Spinach, Sherry Glazed Mushrooms. They serve generous portions that are great for groups and family styled eating. :) Enjoy!
